Pumpkin Oatmeal
SERVES 1
INGREDIENTS:
- ½ cup rolled oats
- 1 cup almond milk (or any milk of your choice)
- ¼ cup pumpkin puree
- 1 tablespoon maple syrup or honey
- ½ teaspoon pumpkin pie spice
- 1 tablespoon chia seeds
- 1 tablespoon chopped nuts (like walnuts or pecans)
- Optional toppings: fresh berries, sliced banana, or a dollop of Greek yogurt
DIRECTIONS:
- In a small saucepan, combine oats, almond milk, pumpkin puree, and pumpkin pie spice.
- Cook over medium heat until the oats are soft and the mixture thickens, about 5-7 minutes.
- Stir in the maple syrup or honey and chia seeds.
- Serve topped with nuts and your choice of optional toppings.
Pumpkin Smoothie Bowl
SERVES 1
INGREDIENTS:
- 1 frozen banana
- ½ cup pumpkin puree
- ½ cup Greek yogurt (or dairy-free alternative)
- ¼ cup almond milk (or any milk of your choice)
- 1 tablespoon almond butter (or any nut butter)
- ½ teaspoon pumpkin pie spice
- Toppings: granola, chia seeds, sliced almonds, fresh fruit
DIRECTIONS:
- In a blender, combine the frozen banana, pumpkin puree, Greek yogurt, almond milk, almond butter, and pumpkin pie spice.
- Blend until smooth and creamy.
- Pour the smoothie into a bowl and top with granola, chia seeds, sliced almonds, and fresh fruit.
Pumpkin Pancakes
SERVES 2
INGREDIENTS:
- 1 cup whole wheat flour (or gluten-free flour)
- 1 tablespoon baking powder
- ½ teaspoon pumpkin pie spice
- 1 tablespoon maple syrup or honey
- 1 cup pumpkin puree
- 1 egg (or flax egg for vegan option)
- 1 cup almond milk (or any milk of your choice)
- 1 teaspoon vanilla extract
- Coconut oil for cooking
DIRECTIONS:
- In a large mixing bowl, whisk together the flour, baking powder, and pumpkin pie spice.
- In another bowl, combine the pumpkin puree, egg, almond milk, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a skillet over medium heat and lightly grease with coconut oil.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Serve with a drizzle of maple syrup and a sprinkle of nuts or seeds.
