INGREDIENTS:
- 6oz. feta cheese, pat dry and cut into cubes
- 1 Tablespoon chopped fresh thyme leaves
- 1 Tablespoon chopped fresh chives
- 2 Tablespoons chopped fresh flat leaf parsley
- zest of one small lemon
- zest of half an orange
- 1 garlic clove, thinly sliced
- ΒΌ teaspoon ground black pepper
- 1 Tablespoon finely chopped green olives
- 1 teaspoon extra-virgin olive oil (enough to cover feta)
- 1 cucumber
- pinch salt
- toothpicks
DIRECTIONS:
- Place feta into a bowl. Add thyme, chives, parsley, lemon zest, orange zest, garlic, pepper and chopped olives into bowl, then drizzle olive oil over the ingredients. Cover bowl with saran wrap and refrigerate for at least 24 hours.
- Slice cucumber lengthwise into thick rounds. Pat dry and then sprinkle lightly with salt.
- Take a toothpick and skewer one cucumber and 1 cube of feta onto each toothpick. Serve chilled or at room temperature.
