Veggie French Toast

INGREDIENTS:

  • 1 slice whole grain or sprouted toast
  • 1 egg
  • 2 Tbsp water
  • 3-4 Tbsp grated zucchini & carrot
  • ½ tsp curry powder
  • 1 tsp of grass fed butter
  • 3 handfuls halved cherry tomatoes

DIRECTIONS:

  1. Whisk the egg and water together. 
  2. Add veggies and curry powder and continue whisking.
  3. Dip bread into the mixture.
  4. Heat butter on low heat in a skillet. 
  5. Place dipped bread in the skillet for 4 to 5 minutes. 
  6. Flip over and cook for 2 to 3 minutes. 
  7. Remove from skillet. Top with cherry tomatoes
  8. Serve with your preference of either hummus, mashed avocado, or Greek yogurt and enjoy!
