Spiced Salmon and Pineapple Tacos

INGREDIENTS:

  • 4 small corn tortillas
  • 1/2 lb. fresh salmon, skin removed
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded red cabbage
  • 1 avocado, sliced
  • 1/2 cup diced pineapple
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

INSTRUCTIONS:

  1. Preheat the oven to 375 degrees F.
  2. Season the salmon with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until cooked through.
  4. While the salmon is cooking, warm the corn tortillas in a dry skillet over medium-high heat, flipping occasionally, until lightly charred.
  5. Assemble the tacos by placing a portion of salmon in each tortilla, and topping with shredded cabbage, sliced avocado, diced pineapple, diced red onion, and chopped cilantro.
  6. Serve with lime wedges on the side for squeezing over the tacos.
