SERVES 2
INGREDIENTS:
- 4 small corn tortillas
- 1/2 lb. fresh salmon, skin removed
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded red cabbage
- 1 avocado, sliced
- 1/2 cup diced pineapple
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
INSTRUCTIONS:
- Preheat the oven to 375 degrees F.
- Season the salmon with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until cooked through.
- While the salmon is cooking, warm the corn tortillas in a dry skillet over medium-high heat, flipping occasionally, until lightly charred.
- Assemble the tacos by placing a portion of salmon in each tortilla, and topping with shredded cabbage, sliced avocado, diced pineapple, diced red onion, and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
