INGREDIENTS:
- ¼ cup minced fresh cilantro
- 2 tablespoons fresh lime juice
- 2 tablespoons white wine vinegar
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 1 grapefruit peeled and cut into ¼-inch-thick slices
- avocado, cut into ½-inch cubes
- 1 small jicama, peeled and cut into ½-inch cubes
- 12 ounces peeled deveined cooked shrimp
- Red Leaf Lettuce
DIRECTIONS:
- Chop shrimp into small pieces.
- Add shrimp, grapefruit wedges, avocado, jicama, and as much red leaf lettuce as desired to a bowl and toss.
Dressing
- In a medium bowl, combine the cilantro, lime juice, vinegar, olive oil, and salt and pepper and whisk together.
Add dressing to salad and toss again.
