INGREDIENTS:
- 1 can (13.5 oz) coconut milk
- 1 scoop collagen powder
- 2-3 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- Optional: shredded coconut for texture
DIRECTIONS:
- Mix Ingredients: In a blender, combine the coconut milk, collagen powder, honey or maple syrup, and vanilla extract. Blend until smooth. If you want added texture, you can also add shredded coconut at this stage and pulse until combined.
- Taste and Adjust: Taste the mixture and adjust sweetness or vanilla flavor if needed. Add more honey, maple syrup, or vanilla extract according to your preference.
- Pour into Molds: Pour the mixture into popsicle molds. Leave a little space at the top to allow for expansion as the popsicles freeze.
- Insert Sticks: Insert popsicle sticks into the molds. If your molds come with a cover, place it on top and insert sticks through the holes. If not, you can cover the molds with foil and make a small slit to insert the sticks.
- Freeze: Place the popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.
- Enjoy: Once frozen, remove the popsicles from the molds by running warm water over the outside of the mold for a few seconds. Gently pull on the sticks to release the popsicles.
- Serve: Serve the coconut collagen popsicles immediately and enjoy!
