SERVINGS

INGREDIENTS
PIE:
- 1 tsp. coconut oil
- 6 apples, cored and diced into 1-inch cubes
- ½ tsp. Ceylon cinnamon (or reg. cinnamon)
- ¼ tsp. nutmeg
- 2 Tbsp. maple syrup
- 1 Tbsp. lemon juice
- 1 tsp. vanilla extract
CRUST:
- 1 cup oat flour
- ¼ tsp. baking powder
- ¼ tsp. salt
- ½ tsp. cinnamon
- ¼ cup coconut oil, firm (cold)
- coconut oil spray
INSTRUCTIONS
Preheat oven to 350 degrees. Place large pan over medium heat. Add 1 tsp. coconut oil and toss in apples, cinnamon, lemon juice, and nutmeg. Cook for 10 minutes, constantly stirring with a spatula. Remove from heat and toss apple mixture with maple syrup and vanilla extract.
Grease pie tin with coconut oil spray. In a bowl, combine all dry ingredients for crust and stir well. Add cold coconut oil and press in with a fork until mixture is crumbly, but still dry. Add 3 Tbsp. cold water and combine until mixture forms a ball. If mixture is too dry to form a ball, add 1 Tbsp. more water at a time. Firmly press mixture down into the greased pie tin. Bake for 15 minutes.
Add apple mixture to cooked crust.
Bake pie for an additional 15 minutes. Let cool and enjoy!
