INGREDIENTS:
- 3 Tbsp whey protein (almond meal flour for gluten free)
- 1 tsp steel cut oats
- 1 large egg, beaten
- 2 Tbsp raw cacao powder
- 1 Tbsp pure honey
- 1 Tbsp milk of choice
- ¼ tsp baking powder
- ½ tsp vanilla extract
- 1 Tbsp nut butter of choice
- 1 tsp coconut oil
- pinch of salt
Toppings (optional):
- 1 tsp cacao nibs
- Fresh berries
INSTRUCTIONS:
- Mix all dry ingredients for the mug muffin together in a small bowl (salt, baking powder, oats, cacao powder, whey protein or almond flour).
- Then mix coconut oil, milk, vanilla extract, honey, and egg into the bowl and whisk well. Make sure there are no lumps.
- Pour into a microwave-safe mug. Press dollop of nut butter into the center of the batter and place into a high-powered microwave for 80 - 100 seconds, or until the muffin is cooked to your liking.
- Serve the Chocolate Mug Muffin with your toppings of choice. Enjoy!
