Makes 4 tacos
Ingredients:
4 ounces of boneless chicken breast
1 tsp garlic powder
1 tsp cumin
1 tsp cayenne pepper
1 pinch of salt
1 pinch of ground black pepper
1 1/2 tsp olive oil
1 mango, pitted and chopped
2 tbsp fresh cilantro
2 tbsp fresh lime juice
1/2 tsp red onion, chopped
4 whole grain tortillas
Preparation:
Chicken -
Heat a non-stick pan over medium-high heat. Mix all spices together-garlic powder, cumin, cayenne pepper, salt, and ground black pepper and coat the chicken with the combination of spices. Add oil to pan; once the pan is coated with oil, add chicken to pan. Cook chicken for about 4 minutes on each side or until done. Once chicken is cool, cut in slices.
Mango Salsa -
In a medium bowl combine the mango, red onion, and cilantro and fresh lime juice.
Warm tortillas and build your delicious tacos ;)
