Nightshades

Nightshades… Tomatoes, eggplant, peppers, potatoes are all vegetables in the “nightshade” family. Multiple herbs, spices, and condiments cayenne pepper, crushed red pepper, chili powder, paprika, ketchup, salsa, and marinara sauce also fall into this category of foods as they are derived from nightshade vegetables. 
 
That said, these foods have been nourishing people across the globe for thousands of years… with the Mediterranean diet being the most obvious example.

INGREDIENTS:

  • 12 large eggs
  • 1 cup plus 2 tablespoons frozen peas
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons organic Greek yogurt 
  • 1 teaspoon chopped fresh mint, plus leaves for garnish
  • Zest of 1-2 lemons
  • Salt

Eggplant Tomato Goat Cheese Flatbread

INGREDIENTS:

  • 1 eggplant

For the crust:

  • 1 cup arrowroot starch or tapioca flour
  • ⅓ cup coconut flour
  • ¼ teaspoon salt
  • ½ cup unsweetened milk of choice
  • ¼ cup grass fed butter
  • ¼ cup water
  • 3 cloves garlic, pressed or minced
  • 1 egg

For the topping:


Inflammation Fighter Juice

INGREDIENTS:

  • 4 celery stalks
  • ½ cucumber
  • 1 cup pineapple
  • ½ green apple
  • ½ cup spinach
  • ½ cup kale
  • 1 lemon
  • 1 small knob ginger
  • 1 teaspoon matcha powder

DIRECTIONS:

  1. Add all ingredients to vegetable juicer.
  2. Gently stir juice and consume immediately.
